Guacamole

Guacamole

This is the greatest guacamole recipe you'll ever find. Four ingredients, it's is all you need, if you're using any more than four ingredients you'll end up ruining your guacamole. Simplicity is usually the right path, it doesn't matter if you're making Guacamole, roasting a chicken or designing a spacecraft to land on a comet hurdling through the void space.

Pheasant & Waffles

It's time once again for breakfast food, but really it's always time for breakfast food. Pheasant and Waffles topped with Spicy Miso Maple Syrup and Spicy Pickles, is everything you want and need from a breakfast dish. I could eat this dish every day of my life, but if I did I doubt I'd make it past 30. #worthit #CanWePhaseOutHashtagsThisYear?

Buckwheat Crepes with Sardines

To those who say crepes with canned fish aren't appropriate New Years Eve party snacks, to those naysayers I say, more for me. There's no reason to be scared of crepes and canned fish, embrace it people.

Pork Stock

It's the perfect time of year to stock up on stock. If you're a home cook you should/need to make your own stocks. They are incredibly easy to make and you'll be able to yield the delicious benefits all year long. There are so many things you can make with stock, risotto, soups, chili, sauces, and of course my favorite, a nice bowl of ramen.

Spicy Peanut Chicken Wings

Spicy Peanut Chicken Wings

I'm not calling this dish "Thai" Spicy Peanut Chicken Wings, because it's not a Thai dish. Adding lime, fish sauce and peanuts to something doesn't inherently make it Thai. Did I use some of the same flavor profiles you might find a satay? Sure, but this isn't Thai and I'm shaming anyone out there who adds peanuts and lime to a dish and claims that it's a Thai dish, I'm looking at you 90% of Pinterest.
