Lamb with Roasted Fennel & Chipotle Boysenberry Sauce
Valentine's Day is this Saturday and if you're not cooking a delicious meal for your significant other then you might as well just sit alone in a dark room eating a garbage bag filled with candy hearts. Hell, if you're single go live your life, eat candy and lamb! If you are planning on cooking, good for you, I've created a simple and elegant dish that is sure to please your sweetheart, before you please them. And if you're dating a vegetarian or a vegan you should really reevaluate your life.
Lamb is delicious and it's not really an everyday sort of food, so it's the perfect thing to make on Hallmark's most profitable day. That and it's actually really easy to make, so if you have no cooking abilities don't worry.
I'll be honest I've never cooked with Fennel before. It's like celery and an onion had a deformed baby. So I figured roasting it would be the simplest thing I could do with it.

Roasted Fennel
- Fennel sliced
- Olive Oil
- Sea Salt
- Pepper
- Preheat the oven to 400°.
- In a large bowl coat the fennel with the olive oil, salt and pepper.
- Add the fennel to a roasting pan and roast for 20 minutes. Turning the fennel halfway through.
Chipotle Boysenberry Sauce
- 2 cups Frozen Boysenberries
- 3 Chipotle Peppers
- 3 Tablespoons Brown Sugar
- 1 Lime zested and juiced
- 1/2 teaspoon Sea Salt
- Throw everything in a pan and simmer over medium for 15 minutes. Stirring occasionally.
- Using a hand blender, blend all the contents into a puree.
Seared Lamb Chops
- 2 Lamb Chops
- 3 tablespoons Butter
- 2 Garlic Cloves halved
- A sprig of each: Thyme, Marjoram, Rosemary, Sage
- Sea Salt
- Melt the butter in a skillet over medium heat.
- Add the garlic and the herbs.
- Salt each side of the lamb chops.
- Add the chops to the pan and sear each side until browned. The time for each side depends on how well-done you like your meat and your stovetop.
- After it's done cooking, be sure to let each chop rest for at least 10 minutes! If you don't all the juices will come out prematurely.
